The transition from winter to spring is never clean. We get longer, sunnier days, but sometimes they’re full of gusts of wind, or there’s a random skiff of snow. We think this cocktail is perfect to sip as we shift into spring – it pays homage to winter and prepares us for the warmer weather to come.

Feel free to use store-bought cider, or you can use our recipe to make your own – you can’t go wrong either way!

Directions:

  • Add all ingredients except garnish to a shaker with ice, shake for 15-20 seconds.
  • Strain into ice-filled serving glass
  • Garnish with apple slice and cinnamon stick. Enjoy!

Apple Tart

Our apple tart recipe is simple and totally delicious. Outside of the apples, there’s a good chance you already have the rest of the ingredients already in your pantry. If you’re in the mood for a dessert that’s not too sweet and looks completely elegant, this recipe fits the bill perfectly. It’s also easy to make. We promise, even those new to the kitchen will have a hard time messing up this recipe!

Directions

  • Preheat oven to 400 degrees F. 
  • In a 10-inch cast-iron or oven-proof skillet, heat 3/4 cup sugar, stirring until it’s liquefied and golden brown. Remove from heat. 
  • In a small bowl, combine the flour, cinnamon, and remaining sugar. Arrange half the apples in a single layer in the skillet. Sprinkle with half the sugar mixture. 
  • Arrange the other half of the apples over the sugar, and then sprinkle with remaining sugar mixture. 
  • Place any remaining apples over the top to make it level. Dot with butter. 
  • Roll out pastry into an 11-inch circle. Place over apples, pressing gently to cover. Do not flute. 
  • Bake about 50 minutes, or until apples are tender and golden brown.
  • Cool 5 minutes before inverting onto a serving plate.

We just love this recipe. Yes it tastes delicious (of course), but it’s great because it can be served as a healthy breakfast or dessert, or even as a mid-day snack. It’s also easy to adjust the granola recipe so it includes your favorite flavors and ingredients. If you want to make it super special, top with a scoop of vanilla ice cream!

Granola instructions:

  • In a large bowl, mix ingredients together

Apple instructions:

  • Preheat oven to 400 degrees F
  • Line baking sheet with parchment paper
  • Wash and dry apples
  • Slice top 1/3 off apples, set aside
  • Remove most of the apple, leaving about 1/4-1/2 inch
  • Place apples on the baking sheet
  • Stuff apples with about 2 tbsp of granola mixture
  • Top stuffed apples with top layer
  • Bake for 15-20 minutes, or until apples are tender and stuffing is crisp

Green Apple Smoothie

We’re one month into the new year. If you’re finding yourself straying from your healthy resolutions, this is the smoothie to help get you back on track. The combination of the green apple, spinach, and cucumber is a great way to detox and reset.

Adding a little honey or agave nectar will cut any of the bitterness from the spinach or tartness from the lemon juice—your smoothie will be delicious regardless, enjoy!

Directions:

  • Remove skin and seeds from cucumbers, chop into 1” chunks, add to blender.
  • Add spinach, diced apples, lemon juice, coconut water, and ice to blender. Add honey/agave nectar if desired. Add more coconut water if needed.
  • Blend until smooth, pour into glass, and enjoy!

Caramelized Upside-Down Pear Tart

A beautiful, homemade tart is a great way to end a meal. Because we use pre-made pastry dough, this caramelized upside-down pear tart is the perfect combination of relatively low-maintenance and elegant—we all want our dinner guests to feel doted on and special, right?

Try this recipe for an intimate dinner party or a night in with the family. Enjoy!

Directions:

  • Preheat oven to 425°
  • Peel, halve, and core the pears.
  • Heat butter in a 9- or 10-inch cast iron skillet over medium heat.
  • Once foam from butter settles, add in sugar and stir.
  • Add pears to skillet, cut sides up. Sprinkle pears with cinnamon.
  • Cook pears until sugar/butter mixture turns a deep, golden color, 10-25 minutes depending on your skillet and stove.
  • While pears are caramelizing, roll out pastry dough on a lightly floured surface to the size of your skillet.
  • Once pears have caramelized, remove skillet from heat and place pastry over pears. Being careful to avoid touching the skillet, tuck the edges of the pastry inside the rim of the skillet.
  • Place skillet into pre-heated oven and bake for 30-35 minutes, or until pastry is golden brown.
  • Allow to cool for 5 minutes. Place desired serving dish on top of skillet upside-down, and, using oven mitts, flip skillet over so that tart lands on serving dish.
  • Serve warm or at room temperature.
