Granola-Stuffed Baked Apples

Ingredients 

5 Small KORU® Apples
For granola:
1/2 cup oats
1 pinch salt
1 tsp ground cinnamon
¼ tsp ground ginger
1 pinch ground cardamom
1 pinch ground nutmeg
1 pinch ground cloves
2 tbsp light brown sugar
2-3 tbsp chopped walnuts
2-3 tbsp raisins
1 tbsp flax seeds

We just love this recipe. Yes it tastes delicious (of course), but it’s great because it can be served as a healthy breakfast or dessert, or even as a mid-day snack. It’s also easy to adjust the granola recipe so it includes your favorite flavors and ingredients. If you want to make it super special, top with a scoop of vanilla ice cream!

Granola instructions:

  • In a large bowl, mix ingredients together

Apple instructions:

  • Preheat oven to 400 degrees F
  • Line baking sheet with parchment paper
  • Wash and dry apples
  • Slice top 1/3 off apples, set aside
  • Remove most of the apple, leaving about 1/4-1/2 inch
  • Place apples on the baking sheet
  • Stuff apples with about 2 tbsp of granola mixture
  • Top stuffed apples with top layer
  • Bake for 15-20 minutes, or until apples are tender and stuffing is crisp
