First, cook bacon on the stove until crunchy. Set aside and butter two pieces of sourdough bread on opposite ends, on the inside pieces, add dijon mustard, red pepper flakes and fresh thyme leaves. Next, place two handfuls of shredded mozzarella and sharp cheddar cheese. Top with bacon slices and Starr Ranch Growers Pink Lady Apple slices. Place in a panini maker (or stove top), and press down for about 2 minutes, rotating until both sides are crispy and golden brown – careful not to burn. Once finished, remove from panini maker and drizzle with honey and additional fresh thyme leaves. Eat immediately – enjoy!

Begin by heating 2 tbsp olive oil in a medium pan and add the sausage until cooked through. Slice into small pieces OR you can remove the sausage from the casing for a ground effect. Once cooked through remove from heat and place in covered bowl.
Next dice the yellow onion into small pieces, followed by dicing the honey crisp apples – leaving skin on. Add 1/2 stick butter to a large pan and allow to melt. Add the diced yellow onion and apples to a sauce pan and begin to sauté until onions are light brown and caramelized. Stir continuously to prevent sticking to pan. Add dried thyme, salt, pepper and red chili flakes. Cook for about 30-35 minutes or until apples are soft and onions are caramelized.
In a large pot, bring water to a boil – adding a pinch of salt to the water. Add the pasta noodles and cook for about 4-6 minutes. Drain the pasta and set aside, keeping about 1/4 cup water leftover.
When the onions and apples are ready, add the garlic and pine nuts and cook until fragrant (about one minute). Add 1 cup dry white wine and cook until the wine is completely evaporated.
Combine the sausage, onion and apple mixture to the pasta as well as 1/4 cup of the reserved pasta water. Make sure to scrape all juices into the pot. Then, toss in the tomato slices and garnish with parmesan. Serve immediately and enjoy!

- Place all the ingredients (minus pears) in a large saucepan.
- Bring red wine to a soft boil, continually stirring to dissolve sugar.
- Once wine comes to a boil, strain the liquid to discard the whole, fresh fruits. The cloves, orange slices and cinnamon sticks can remain.
- Peel the pears and lower them into the liquid, allowing to simmer on medium heat for about 40-50 minutes – rotating regularly.
- Once pears have been poached, let them stand upright in the liquid until it’s completely cooled.
- Once cooled, you can either enjoy immediately or allow to chill (I prefer to let them chill in the refrigerator for an hour or so to allow flavors to absorb and cool even more). If you prefer this method, just place the pears on a plate and cover with plastic wrap.
- Store excess juice in a container and pour over pears once ready to eat.
- Garnish with fresh thyme and marscapone cheese. Enjoy!

- Preheat oven to 350 degrees. Lightly grease a loaf pan with butter or oil.
- In a bowl, whisk dark brown sugar and apple pie spice and set aside.
- Whisk eggs and granulated sugar in a separate mixing bowl.
- Pour in melted butter and vanilla extract until thoroughly combined.
- Stir in flour, baking powder, baking soda, remaining apple pie spice blend and salt just until combined.
- Fold in chopped JUICI apples.
- Add half the bread batter to the prepared loaf pan and using a spoon sprinkle the sugar mixture on top.
- Spread the remaining batter carefully on top of the brown sugar mixture. Sprinkle remaining brown sugar mixture on top and press gently into batter.
- Bake for 50-55 minutes or until a toothpick comes out clean.
- Let bread cool completely. Enjoy!
