Spicy: Spiced Chai Apple Overnight Oats

Ingredients for Chia Oat Base: 

½ cup rolled oats

2 tbsp chia seeds

1 cup almond milk

A sprinkle of mixed spices – cinnamon, cardamom, nutmeg, all spice

½ Starr Ranch Honey Crisp Apple

 

Ingredients for Creamy Chai Topping:

Whipped cream

Sliced Starr Ranch Honey Crisp Apple

Sprinkled spice mix

Cinnamon stick for garnish

Mix together and enjoy!

Ingredients for Chia Oat Base: 

½ cup rolled oats

2 tbsp chia seeds

1 cup almond milk

1 tbsp honey

Sprinkle of cinnamon

 

Ingredients for Apple Pie Topping:

1 Starr Ranch Honey Crisp Apple – diced

1 tsp corn starch

1 cup apple cider

Sprinkle of cinnamon

 

Instructions:

Add Apple Pie Topping ingredients to stove top until soft and simmering. Add to oat base hot or cold and mix as necessary. Top with cinnamon sugar and enjoy!

Ingredients for Chia Oat Base: 

½ cup rolled oats

2 tbsp chia seeds

1 cup almond milk

1 tbsp creamy peanut butter

½ Starr Ranch Honey Crisp Apple – diced

 

Ingredients for Crunchy Peanut Butter Topping:

½ cup peanut butter granola

Sliced Starr Ranch Honey Crisp Apple

Warm drizzled creamy peanut butter

Mix together and enjoy!

Instructions:

Combine cherries, sugar, and lemon juice into blender and puree until smooth. Strain into a pitcher, add ice, and garnish with lemons, cherries and rose petals. Enjoy!

Cherry Berry Cheesecake Popsicles

Cherry Berry Cheesecake Popsicles

Instructions:

  1. Pit 1 cup cherries, and dice 1 cup strawberries. When finished, add cherries and berries to saucepan along with 2 tbsp honey or sugar for added sweetener, and cook until a simmer begins and juices start to burst while stirring occasionally. Once the mixture begins to bubble, remove from heat and let it cool for 10 minutes. After 10 minutes, add to a Tupperware safe container and place the mixture in the freezer for 20 minutes to cool down completely as you complete the next steps for the Cheesecake Base and Crust.
  2. Add the Cheesecake Base Mixture ingredients into a bowl and mix together with a hand mixer on medium-high speed. The mixture should look soft and fluffy. Set aside.
  3. Pulse 4 Graham Crackers in a blender or food processor until tiny, crumb-like pieces form. Set aside and pour in 1 tbsp of butter or coconut oil for a dairy free option.
  4. Begin filling your popsicle molds with 1 tbsp of Cheesecake Mixture and Cherry Berry Mixture one after another, and swirl around inside the mold to create a desired ‘swirl’ or ‘marble’ effect.
  5. Leave a ½ inch at the top of the mold to pack in the Cheesecake Crust, leaving enough comfortable room to close the popsicle mold and store.
  6. Place in freezer for 8 hours or overnight.
  7. Run warm water for 5 seconds on each side of the molds to loosen the mold and easily remove the popsicle.
  8. Enjoy!

Homemade Granola

Who doesn’t love granola? Our recipe is a great little healthy snack on its own, or you can put it over yogurt, ice cream, or whatever milk you like to drink. Either way, you’ll get the flavor of apple pie while you’re enjoying the health benefits of oats, chia seeds, nuts, and apples.

If you have other favorite mix-ins such as coconut, chocolate chips, or dried cranberries, feel free to add them in!

Directions:

  1. Preheat oven to 225 degrees F. Line baking sheet with parchment paper.
  2. Wash, dry, and core apples. Slice apples as thinly as possible and place on baking sheet.
  3. Sprinkle apples with 2 tsp cinnamon.
  4. Place in oven and bake for 1 hour. Flip apples and bake for another hour. (The longer they stay in the oven, the crispier they get!)
  5. When the apples are done, remove them from oven and allow to cool.
  6. Turn the oven to 300 degrees F and reline a baking sheet with parchment paper.
  7. Mix oats, walnuts, pecans, chia seeds, cinnamon and nutmeg together in a bowl.
  8. Stir maple syrup and coconut oil together and pour into the dry mixture. Mix until well combined.
  9. Spread granola evenly on the baking pan.
  10. Bake for 25-35 minutes, or until the granola is golden brown.
  11. Remove from oven and let cool.
  12. Break apple chips into small pieces. Mix chopped apple chips into granola.
  13. Serve immediately, or store in an airtight jar or container.
Baked Apple & Fig Ham

Baked Apple & Fig Ham

Easter is right around the corner, and nothing completes Easter dinner quite like a baked ham. We took this staple and dressed it up ever so slightly with an apple glaze, and apple and fig garnish (which can also serve as a side dish, FYI!).

Our Granny Smith apples have the perfect amount of tartness to balance the sweetness of the rest of the glaze. Make this beautiful ham and you’re sure to enjoy your holiday dinner!

Directions:

  • Preheat oven to 325°.
  • While oven is pre-heating, add 1 ¼ cup apple cider, brown sugar, ½ tsp allspice, nutmeg, and most of your cinnamon to a medium saucepan over high heat. Bring to a boil and then reduce to medium-low heat. Let simmer for 10-15 minutes or until mixture thickens.
  • Pour remaining ½ cup of apple cider onto a baking dish and then place ham on top, fat side up. Brush half of your glaze over the ham – make sure to get inside of slices. Cover with foil and bake 15 minutes per lb. of ham.
  • When you have 30-40 minutes left of baking, remove the ham from the oven.
  • Toss sliced apples and figs in ½ tsp of allspice and remainder of cinnamon.
  • Add onion, tossed apples and figs to your roasting pan around the ham. Brush the remaining glaze on the ham. Put back into the oven for the remainder of cook time.
  • Ham is done when internal temperature reads 145° and apples are tender. Enjoy!
