Shredded Chicken Tacos with Colorful Apple Slaw

Ingredients 

2 cups Shredded Chicken
1 tbsp Paprika
1/2 tbsp Garlic Salt
1 Lime, Zested and Juiced
1/2 Onion, diced
1 Starr Ranch Growers Honeycrisp Apple, diced
2 Radishes, sliced
1/3 cup Cilantro, finely chopped
1 cup pre-made Slaw Mix
2 tbsp pre-made cilantro avocado dressing
2 jalapeños, diced
2-3 tbsp Cotjia Cheese for Garnish
4-5 Corn Tortillas
  1. Shred rotisserie chicken into a medium bowl and sprinkle with paprika, lime zest and garlic salt. Place aside in bowl and cover.
  2. Meanwhile, dice jalapeños, radishes, cilantro, Starr Ranch Growers honeycrisp apples, and onion. Add a small handful of slaw mix into bowl. Squeeze juice from half a lime into mixture along with 1 tbsp cilantro avocado dressing, and stir gently to combine flavors.
  3. Heat corn tortillas over stove top and fill with chicken apple slaw.
  4. Top with a sprinkle of cotija cheese.
  5. Enjoy!
