- Shred rotisserie chicken into a medium bowl and sprinkle with paprika, lime zest and garlic salt. Place aside in bowl and cover.
- Meanwhile, dice jalapeños, radishes, cilantro, Starr Ranch Growers honeycrisp apples, and onion. Add a small handful of slaw mix into bowl. Squeeze juice from half a lime into mixture along with 1 tbsp cilantro avocado dressing, and stir gently to combine flavors.
- Heat corn tortillas over stove top and fill with chicken apple slaw.
- Top with a sprinkle of cotija cheese.
