Add oats, apple sauce, apple pie spice, salt, chia seeds, honey and vanilla extract to a medium-sized bowl and mix well. Lightly grease a muffin pan and gently press about 1 tbsp of mixture into each cup and mold a mini crust. Bake for 12 minutes at 350 degrees, remove and let cool for about 45 minutes. Spoon about 1/2 tbsp of vanilla yogurt into each cup, garnishing with fresh Starr Ranch Growers Apples, berries, mint leaves and shaved almonds (optional). Wash it down with a mimosa – enjoy!
