JUICI Apple Spring Pretzel Pie

Ingredients 

Pretzel Crust:
2 1/2 cups finely ground salted pretzel crumbs
1 stick salted butter, melted
3 tablespoons honey
1/2 teaspoon cinnamon
Fruit Filling:
2 1/4 cups heavy cream
2 teaspoons vanilla extract
8 ounces room temperature cream cheese
6-7 tablespoons confectioners sugar
2 tablespoons apple butter
1/3 cup honey
1/2 tablespoon cinnamon

Instructions:

  1. Preheat the oven to 350 degrees
  2. Add pretzels to a blender or food processor and blend until pretzels are ground and mealy
  3. In a medium bowl combine pretzel crumbs, butter, honey and cinnamon – mix well and press onto a 8-9 inch pie pan. Place in oven and bake for 8-10 – watch carefully to not over-toast! Allow to cool.
  4. Next, add heavy cream and vanilla to a bowl and mix until a soft peak forms, for about 3-4 minutes. Add the cream cheese and sugar and beat until fully combined.
  5. Add apple butter to the bottom of the pie pan, and top with cream. Place in freezer for 4-6 hours or overnight.
  6. Add honey and cinnamon to a small saucepan and simmer, add JUICI apple slices – tossing to combine. Remove from stove top and allow to cool.
  7. Top frozen pretzel pie with honey-drenched apple slices, raspberries and figs (other in-season fruit on hand works great as well).
  8. Top with sliced almonds, fresh florals, herbs and additional honey sauce.
  9. Have a slice or two and place back in the freezer for next time – enjoy!
