Instructions:
- Preheat the oven to 350 degrees
- Add pretzels to a blender or food processor and blend until pretzels are ground and mealy
- In a medium bowl combine pretzel crumbs, butter, honey and cinnamon – mix well and press onto a 8-9 inch pie pan. Place in oven and bake for 8-10 – watch carefully to not over-toast! Allow to cool.
- Next, add heavy cream and vanilla to a bowl and mix until a soft peak forms, for about 3-4 minutes. Add the cream cheese and sugar and beat until fully combined.
- Add apple butter to the bottom of the pie pan, and top with cream. Place in freezer for 4-6 hours or overnight.
- Add honey and cinnamon to a small saucepan and simmer, add JUICI apple slices – tossing to combine. Remove from stove top and allow to cool.
- Top frozen pretzel pie with honey-drenched apple slices, raspberries and figs (other in-season fruit on hand works great as well).
- Top with sliced almonds, fresh florals, herbs and additional honey sauce.
- Have a slice or two and place back in the freezer for next time – enjoy!
