Apple Honey Pecan Crepes

Ingredients 

2 Starr Ranch Growers Granny Smith apple, diced
1 cup all purpose flour
2 eggs
¾ cup whole milk
½ cup apple cider
1-2 tbsp butter for greasing pan
1/3 cup raw sugar mixed with 1 tbsp cinnamon (cinnamon sugar mix)
Honey or maple syrup for drizzling
1/3 chopped pecans
Whipped cream for garnish

Whisk flour and salt together in a medium bowl. Add the eggs, milk and apple cider until incorporated and smooth. Let batter sit for about 20 minutes. Heat a cast iron skillet with 1/2 tbsp butter and spoon a mixture into the pan – about 2 tbsp worth. Smooth the batter to it’s very thin – you can use the back of a spoon for this. Allow the crepe to cook until lightly golden on one side, and gently flip to cook the other. Set crepes aside as you go, repeating the process until the batter has been completely used. Feel free to add butter as you go to continue to grease the pan. In a separate skillet, add diced Starr Ranch Growers granny smith apples along with 2 tbsp butter – sprinkling with raw sugar and cinnamon. Cook and stir until soft and fragrant. Remove from skillet and set aside. Top the crepes with the apple mixture and garnish with pecan slices, honey drizzle and whipped cream. Feel free to fold the crepes in half twice and fill the pockets with the apple mixture as shown in the photo, or you can simple roll the crepes like a taquito, or even leave flat similar to a pancake while adding the toppings to the top.
