Spring Apple Proscuitto Salad

Ingredients 

1 cup romaine
1 cup spring mix greens
4-5 slices prosciutto
Juice from 1/2 lemon
6 oz. fresh mozzarella or burrata
1 Starr Ranch Growers Apple - Sliced
1/4 cup pickled red onions
2 tablespoons olive oil
1 teaspoon dijon mustard
Pinch of sea salt and black pepper
Dash of balsamic vinegar
Pinch of crushed red pepper
Garnish with crushed pistachios

Add all ingredients to a large bowl and toss well – drizzle with dressing and enjoy!
